We can't help but love a festive dessert. So, needless to say, we're pretty excited about these Guinness & Bailey's Cupcakes.
1 ⅓ cup flour
⅓ cup cocoa
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup sugar
½ cup buttermilk
¼ cup vegetable oil
½ tsp vanilla
½ cup Guinness
1 stick unsalted butter, room temp
½ tsp vanilla extract
1 ¼ cup powdered sugar
2 tbsp Bailey’s Irish Cream
(optional: green food coloring, sprinkles)
In a large mixing bowl combine egg, sugar, buttermilk, vanilla, vegetable oil and Guinness. Whisk until well combined.
In a medium bowl combine flour, cocoa powder, salt, baking soda and baking powder. Stir to combine.
Gradually add dry ingredients to wet ingredients using a rubber spatula to combine.
Mix until just incorporated.
Using a scoop or measuring cup, transfer the batter to muffin tins. This mix will fill 12 cupcakes.
Place in your Tovala and bake using the QR code below. Make sure to rotate the pan halfway through baking to get an even bake.
Allow to cool completely before icing!
Add all frosting ingredients to a stand mixer with whisk attachment
Starting on a low speed, mix to incorporate.
Increase the speed and beat on high for 5-10 minutes until frosting builds in volume.
Keep at room temperature until ready to frost.
To frost like Chef Emily:
For marbled frosting: Fill a glass with a plastic bag and dot the bag with green food coloring. Fill the bag with frosting. Cut off about ¼ inch of the tip of the bag and use to dollop the cupcakes.
For sprinkles frosting: Cover cupcake in frosting and then dip into a shallow bowl filled with sprinkles.
